Tossed Shell Salad 

 

Quick and easy to make, good side dish or main dish with a green vegetable.

 

2-3/4 cups uncooked shell macaroni

1 cup cherry tomato halves

1 cup (4 ounces) shredded Cheddar cheese

1/2 cup sliced green onions

1/2 cup pitted ripe olives, sliced

1 medium-size green pepper, thinly sliced

1/4 cup vegetable oil

2 tablespoons lemon juice

1 teaspoon dried whole dill weed

1 teaspoon dried whole oregano

1/2 teaspoon salt

1/8 teaspoon pepper

 

Cook macaroni according to package directions; drain.  Rinse with cold water; drain.  Combine macaroni and next 5 ingredients; set aside.  Combine oil and remaining ingredients; pour over macaroni mixture and toss gently.  Cover and chill.  Yield:  8 servings.
