Pumpkin Nut Waffles

A favorite with my family.  Make ahead and freeze!

2 1/2 cups sifted pastry flour

4 teaspoons baking powder

1/2 teaspoon salt

3/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

3 eggs, separated

1-3/4 cups milk

1/2 cup oil

1/2 cup canned pumpkin

2/3 cup chopped pecans

 

Sift together dry ingredients.  Beat egg yolks.  Combine with milk, oil, and pumpkin.  Add to dry ingredients.  Beat egg whites stiff.  Fold into batter.  Pour onto hot waffle iron.  Sprinkle with a few chopped nuts and bake.  Yield:  about 8 waffles.

Spread with Orange Butter and Honey.

Orange Butter:

1/2 cup butter, softened

1 tablespoon orange zest

 

Combine ingredients.  Mix at medium speed of electric mixer until blended.
