Low Fat Chocolate Chip
Muffins
Yummy good muffin recipe from my Daughter, Laura
2 cups flour
1/2 cup packed brown sugar
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
3/4 cup Milk
1/4 cup melted butter
2 eggs, lightly beaten or egg substitute
1 tsp vanilla
1 package chocolate chips
1/2 cup chopped pecans or walnuts (optional)
Preheat oven to 400 degrees. Line muffin tin with cupcake papers.
In a large bowl, stir together flour, sugars, baking powder, and salt. In
another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in the center of
the dry ingredients; add milk mixture and stir just to combine. Stir in
chocolate chips and nuts.
Spoon batter into muffin cups and bake 15-20 minutes. Cool 5 minutes before
removing from cups. Dust with powdered sugar.
You may also substitute 1/3 cup Barley Malt (a natural sweetener) for all the sugar.
