Golden Chicken Roll

Delicious...great for special occasions or anytime.  Recipe from my Mother

 

1/4 cup butter

1/4 cup minced onion

1/4 cup chopped green pepper

1/4 cup flour

1/2 teaspoon salt

Dash red pepper

1 cup chicken stock

3 cups cooked chicken

2 cups cooked rice

1/4 cup diced pimento  

2 tablespoons grated cheese

1 cup Corn Flake crumbs

3 tablespoons melted butter

 

Melt 1/4 cup butter, sauté onion and green pepper until tender.  Blend in salt and pepper.  Add chicken stock.  Stir constantly until bubbly and thickened.  Cool.  Combine chicken, rice, pimento, cheese and cooled sauce.  Chill several hours or overnight.  Combine 3 tablespoons melted butter with Corn Flake crumbs and spread evenly on wax paper 12 x 15 area.  Shape chilled chicken into firm roll 10 inches long.  Place in center of crumbs and roll gently back and forth until well coated.  Bake 350°F 40 minutes.  If desired, garnish with pimento strips.  Peas and apples around this platter make a nice meal.
