My Mother's
recipe, served with Hot Lemon Sauce
1/2
cup sugar
1/2 cup molasses
1
egg
2 tablespoons melted butter
1 teaspoon soda
2 teaspoon ginger
1/2
teaspoon cinnamon
1/8 teaspoon cloves
2 teaspoons baking powder
2 cups unbleached flour or 1 cup whole wheat and 1 cup unbleached flour
1/4 teaspoon salt
1/2 cup boiling water
Stir syrup and molasses together with beaten egg. Add butter. Add soda
dissolved in 1 tablespoon boiling water. Stir in flour, ginger, cinnamon,
cloves, salt. Mix well. Stir in 1/2 cup boiling water. Beat well. Pour
into 8-inch square greased pan or muffin tins. Bake 400
degrees
15-18 minutes. Serve with warm Lemon Sauce.
Lemon Sauce
1/2 cup sugar
1 tablespoon cornstarch
Dash nutmeg
1 cup boiling water
1 teaspoon butter
3 tablespoons lemon juice
Mix flour, nutmeg together. Gradually add sugar and water.
Cook over low heat until thick and clear. Add butter and lemon
juice. Blend thoroughly.
