Frozen Lemon Pie
Perfect lemon, light and Refreshing
Pie
3 eggs
1/2 cup
plus
1
tablespoon sugar
1/8
teaspoon salt
1/4 cup
lemon juice
Zest of 1/2 lemon
1/2 pint
whipping cream
1 cup
cookie or graham cracker crumbs
Separate
eggs, beat yolks slightly and cook in double boiler with 1/2 cup sugar,
salt, lemon juice, and rind until a little thick. Cool slightly and
fold into the 3 stiffly beaten egg whites plus 1 tablespoon sugar. Fold
this into the whipped cream. Make a layer of cracker crumbs in 8x8
square pan; pour mixture on top and add remaining crumbs on top.
