Dixie Pecan Pralines 

 

1 cup granulated sugar

1 cup firmly packed brown sugar    

1/2 cup evaporated milk

1/8 teaspoon salt

2 cups pecan halves

2 tablespoons butter

2 teaspoons vanilla extract

 

Cover cookie sheets with waxed paper.  In heavy, 2-quart saucepan, combine granulated sugar, brown sugar, evaporated milk and salt.  Cook over low heat, stirring constantly, until sugar dissolves.  Increase heat to medium; bring to a full boil.  Cook stirring occasionally, until temperature reaches 234°F on candy thermometer, or until a few drops of mixture form a soft ball when dropped into cold water.  Remove from heat; stir in pecans, butter and vanilla.  Return to medium heat until temperature again reaches soft-ball stage (234°F).  Quickly drop by level tablespoonfuls onto prepared cookie sheets.  Cool.
