Chicken Mexican Stir Fry

 

Marinade

 

1-1/2 teaspoons each salt and ground cumin

1 clove garlic, minced

1/2 teaspoon each chili powder and crushed red pepper

2 tablespoons each vegetable oil and lemon juice

1-1/2 pounds boneless skinned chicken sliced into strips

 

Combine above and marinate meat 2 hours.

 

Fajita

 

3 tablespoons vegetable oil

1/2 cup each sliced onion and chopped green onion

1 cup each sliced red and green bell pepper

 

Quickly sauté vegetables in oil until lightly browned; remove from pan.  Sauté marinated meat until done; add onion-pepper mixture and continue cooking 5 minutes.  Serve over rice or spoon into flour tortillas and serve with avocado slices, salsa and sour cream.
